Post-tennis recipe: replenish your energy stores with a delicious green frittata
After the match, it's time to recover. Of course, this also includes replenishing your energy stores with the right nutrition. To help you refuel, here's a delicious post-tennis recipe: a green frittata that tastes great both warm and cold.
Ingredients for 4 people
- 2 spring onions including greens
- 2 cloves of garlic
- 400g zucchini
- 3 tablespoons olive oil
- 250g peas (frozen or fresh)
- 8 sprigs of mint
- Salt
- pepper
- 8 organic eggs
- 150 g fresh goat cheese
preparation
- Cut the spring onions into thin strips, finely chop the garlic.
- Clean and wash the zucchini, quarter lengthwise and cut diagonally into 1 cm wide triangles.
- Heat oil in a large ovenproof frying pan. Fry zucchini and spring onions in it over medium-high heat for 3 minutes, stirring occasionally.
- Pour hot water over the peas, let them steep briefly, and then drain them in a sieve.
- Roughly chop the mint.
- Briefly sauté the garlic with the zucchini, mix in the peas and mint, and season generously with salt and pepper.
- Whisk the eggs and spread them in the pan. Add the cream cheese in large chunks.
- Bake in a preheated oven at 220 degrees Celsius (top and bottom heat) on the oven rack in the middle of the oven for 15-20 minutes. Let it rest for 5 minutes and then transfer it to a plate.
Serve with bread or salad. It can also be enjoyed cold hours later!
